Parmesan Cheese Crusted Halibut
- 2lbs Fresh Halibut Fillets - cut into portions and skin removed
- 2 Eggs - beaten
- 1/2 Cup Flour
- 2 Cups Panko Breadcrumbs
- 1/2 Cup Parmesan Cheese
- 1/2 tsp Garlic Powder
- 1 tsp Smoked Paprika
- 1/4 Cup Vegetable Oil
- 1/2 tsp Sea Salt
- Lemon wedges for garnish
Set up 3 bowls - one with flour, one with beaten eggs, and one with mixed panko breadcrumbs, parmesan cheese, garlic powder, and smoked paprika
Heat vegetable oil in a large skillet to medium - when a sprinkle of flour sizzles in your pan, it's ready for the fish
Dredge each portion in the flour and tap off the excess, then dip in eggs, then roll in the breadcrumb mixture to coat thoroughly
Place crusted halibut gently into the skillet
Fry the halibut portions for about 4 min until edges are golden brown
Carefully flip the fillets over and fry for a further 3-5 min
Use a paper towel to blot the oil, sprinkle with sea salt, and serve with lemon wedges and tartar sauce for dipping.
