 SABLEFISH  HALIBUT  MUSSELS  OPTIONAL  OYSTERS  CRAB  PRAWNS  SALMON  TUNA  URCHIN
       

Cedar Plank Salmon

  • 1 salmon fillet (approx 1 1/2 lbs or 750g)
  • 1/4 cup olive oil
  • Juice and zest of  1 lemon or orange
  • 1 Tbsp chopped fresh basil
  • 1/2 tsp salt
  • 1 tsp black pepper
    

Combine all ingredients (except salmon) and pour over salmon to marinate. Meanwhile, soak an untreated cedar plank in cold water for about two hours.  Weigh the plank down with something heavy so it is fully immersed in the water. Place the plank in a 450 degree oven for 5-10 minutes.  Remove salmon from the marinade and bake on the plank until cooked, allowing about 10 minutes per inch of fish.

To Barbecue:
Soak the plank as instructed above.  Place salmon on plank, and place the plank on the grill.  Close lid and grill over medium-high heat for about 20 minutes.
