BBQ
Salmon With Blueberry Salsa
- 1 Salmon
Fillet, about 11/2 lbs
(750g)
Blueberry Salsa
Combine just
before serving:
- 1/2 large
pink grapefruit
(sectioned with membrane
removed), diced
- 2 Tbsp
red onion, finely chopped
- 1 Tsp
honey
- 1 Tbsp lime juice
- 1 cup of fresh or thawed
blueberries
- 2 Tbsp
fresh cilantro, chopped
- Salt and
black pepper, to taste

Cut
salmon into 4 equal
servings. Prepare the BBQ
and oil the grill. BBQ
salmon skin side down over
medium-high heat for approx 10
mins per inch of thickness.
Combine salsa ingredients and
spoon mixture over salmon, or
serve on the side.
