Black
Bean Wok'd Sablefish

Enjoying the finished product Sauce
Mix in a bowl:

- 250 ml
white wine
- 250 ml
water
- 8 Tbsp
(1/2 cup) black bean
sauce
- 2 Tbsp
chili sauce
- 1 Tbsp
other chili sauce
- 2 Tbsp
thick Soya sauce
- 2lbs
Sablefish Fillets
- 1/2 cup
minced ginger
- 1/2 cup
minced garlic
- Chopped
green onion (1 1/2"
lengths)
- 2 lemons,
sliced
Chopped Ginger, sauce and chopped Garlic |
Cut
Sablefish (or other fish fillets)
into 2" chunks. Flour
fish chunks; oil wok. Fry
fish until almost browned before
adding garlic and ginger. Sautee
until garlic and ginger are
nearly transparent and add sauce,
almost covering fish. Add green
onions and let the sauce thicken,
stirring occasionally. Add lemon
juice and garnish dishes with
lemon slices.
