 SABLEFISH  HALIBUT  MUSSELS  OPTIONAL  OYSTERS  CRAB  PRAWNS  SALMON  TUNA  URCHIN
       

Oysters Rockefeller

  • 2 8-oz tubs pf Vancouver Island Oysters
  • 8 slices of bacon, diced
  • 1 pkg. frozen spinach, thawed & drained
  • 1 tsp nutmeg
  • 4 large shallots or 1/2 small red onion, diced
  • Hollandaise Sauce
    

Sauté bacon until nearly crisp.  Add shallots and sauté until shallots are transparent. Add spinach and nutmeg, and toss until mixture is heated through. Top oysters with mixture and top with hollandaise sauce and cheese.  Bake at 350 degrees for approx 20 mins.
