Antioxidant-Rich
Fish With Salsa
- 2 lemons
- 4 pieces
of fish (your
choice...halibut,
salmon, tuna, etc)
- 1 yellow
bell pepper
- 1 stalk
celery
- 4 plum
tomatoes
- 1 onion
- 2 chili
peppers
- 1 clove
garlic
- Olive oil
- Black
pepper & parsley to
taste

In a small
dish, mix pepper, the zest from
one lemon, and the juice from
both lemons. Pour mixture
over the fish, and refrigerate
while marinating for 30 mins,
turning once. Chop pepper,
celery, tomatoes, onions,
chilies, and parsley. Mix
ingredients with crushed garlic
to make a salsa. Preheat
oven to 425F. Place fish
steaks in a lightly oiled baking
dish and spoon salsa over top.
Add a small amount of olive oil
to the top of each steak, and
bake for 20 mins until fish is
cooked through. Garnish
with the remaining parsley.
Serve with green salad, green
beans, broccoli, or spinach for a
meal rich in antioxidants.
